A short portrait of our six dates

Medjool, or Mejhoul, is a variety that originated in Morocco, in the Tafilalet. Today it is grown in several countries, and the origin of our batches can change from one shipment to the next. Large, plump, almost caramelized, it comes in two sizes here: Large Medjool dates and Jumbo Medjool dates, larger still. Ajwa dates, a variety traditionally associated with Medina, are small, almost black and tender, with a more subtle sweetness. Sukari dates, whose name evokes sugar in Arabic, are golden, very sweet and melting. Finally, Tunisian dates on the branch and Algerian dates on the branch arrive still attached to their strands, amber-colored and firmer in texture: set whole on the table, they have a charm the others don't.

Which one to choose?

For ftour, a generous date that stands on its own is ideal: Medjool, served as is or with a glass of milk. For a festive platter or a gift, the jumbo size makes an impression. Ajwa is often chosen for its symbolic value, especially on the return from Hajj or Omra. Sukari will please anyone with a sweet tooth, and dates on the branch are perfect for an everyday table: set them down whole and everyone helps themselves.

How to serve them

Take the dates out of the refrigerator fifteen minutes before serving: they get their softness back. For tea, plan one or two dates per person alongside the nuts; at ftour, two or three. For a very simple bite, split a Medjool, remove the pit and tuck in a walnut half or an almond: our Walnut halves and our Forna almonds from Meknes work very well for this. In the kitchen, dates sweeten a tagine, a milk smoothie or a cake, and can be blended into a paste to fill cookies.

Storing them well

Medjool, Ajwa and Sukari are soft dates: keep them in an airtight container in the refrigerator, where they last much longer than at room temperature. Dates on the branch cope better with household air: a cool, dry, dark place suits them, and the refrigerator extends their life. Small white spots on the surface may be sugar crystallizing; a sour smell or mold, on the other hand, means the date should be thrown away.

What's the difference between large and jumbo Medjool?
It's the same variety in two sizes: jumbo is bigger than large. Jumbo makes more of an impression on a platter; large is just right for everyday ftour.

It depends on the variety and the size. As a rough guide, a kilo of Medjool holds about 30 to 50 dates; smaller dates, like dates on the branch, are far more numerous per kilo.
