Description
Shelled walnuts in halves, light in color, crunchy and tender at once. Their taste is mild and slightly woody, with the slight bitterness of the skin that gives the walnut all its character. In Morocco the walnut is called kerkaa, and it has a central place in the Achoura basket.
Serve them with tea and dates, or tucked into a date or a dried fig. In baking, they go into ghriba, loaf cakes, brownies and celebration cakes, and they crumble nicely over yogurt, a salad or a bowl of oats.

Storage
Walnuts go rancid quickly in the heat: keep them in an airtight container in the fridge, or in the freezer for long storage.
