Description

Whole almonds from the Meknes region, sold in Morocco under the name Forna, with their matte brown skins. Their taste is clean and slightly sweet, the almond taste you find in Moroccan pastries.

Serve them whole with tea, next to dates and figs. Blanched and then toasted, they become gazelle horns, briouates, ghriba or amlou (the almond, argan oil and honey spread); fried, they crown a tagine or a seffa. For the large quantities of celebrations and Ramadan, choose the largest size.

Storage

In an airtight container, in a cool place away from light. For longer storage or in very hot weather, keep them in the fridge: almonds go rancid in the heat.

Questions about forna almonds from meknes

How do I blanch almonds?
Drop them into boiling water for 1 to 2 minutes, drain, then pinch each almond between two fingers: the skin slips right off. Dry them before toasting or grinding.
How are they different from the standard almonds?
Forna is an almond from the Meknes region, sold under that name in Morocco. The standard almond is our everyday almond, more economical, for cooking and large quantities.
