Description

White sesame seeds, an even pale ivory, with a mild nutty taste that comes out as they cook. This is the sesame of Moroccan pastry, the one that turns golden on chebakia and crackles on honey briouates.

Toast it in a dry pan for sellou, cover chebakia with it while still hot, sprinkle it over bread, krachel and cookies. In cooking, it goes with salads, stir-fried vegetables and pan-fried chicken or shrimp. Before Ramadan, get a generous size.

Storage

In an airtight jar, in a cool place away from light. Rich in oil, the seeds go rancid in the heat: in hot weather, keep them in the fridge.

Questions about white sesame

How do I toast it without burning it?
In a dry pan over medium heat, stirring constantly for 3 to 5 minutes. Take it off the heat as soon as it turns golden and tip it into a cold dish: it keeps browning in a hot pan.
How is it different from Indian sesame?
White sesame is pale and mild, well suited to decorating. Indian sesame is more golden. Both are toasted the same way for sellou.
