Description

Finely ground coriander seeds, a beige powder with a gentle, lemony, slightly woody aroma. It is nothing like fresh kosbour (cilantro) leaves: the ground seed brings a rounded warmth, with no grassy edge.

It lifts kefta, meatballs and homemade sausages, slips into vegetable tagines and soups, and goes into spice blends. A pinch in a vinaigrette or on roasted carrots is enough to make a difference. For well-seasoned kefta, pair it with cumin, paprika and parsley.

Storage

In an airtight jar, away from light, heat and cooking steam. Once ground, it loses its aroma faster: close it tightly after each use.

Questions about ground coriander

How is it different from fresh cilantro?
They are two different ingredients: the fresh leaves taste green and bright, while the ground seed has a gentle, lemony aroma. Many Moroccan recipes use both.
How much should I use?
Allow about one teaspoon per 500 g of ground meat, adjusted to taste.
