Description

Pale green seeds, long and finely ridged, with a sweet anise aroma. In Morocco they are known as nafaa, and they flavor homemade bread, cookies and Ramadan sweets.

A spoonful of seeds in the dough for khobz (Moroccan bread) or fekkas (Moroccan biscotti) is enough to give them that familiar taste. They go into chebakia and sellou, and they are steeped in hot water after a meal. Lightly toasted in a dry pan, they release more of their aroma.

Storage

In an airtight jar, in a dry place away from light. Whole seeds keep their aroma longer than ground ones.

Anise or fennel?
Our catalog lists them as anise, under the name nafaa. The two seeds look alike and are used the same way in bread and cookies; if your recipe calls specifically for one or the other, message us on WhatsApp before you order.
Do they need toasting?
It is optional. A minute in a hot, dry pan, stirring, wakes up their aroma before you add them to a dough.
