Description

Whole almonds, neatly shaped, in their smooth brown skins, sold in Morocco under the name louz mkerkeb. Their taste is mild and clean, their crunch crisp: this is the all-purpose almond, the one you buy by the kilo for everyday cooking.

Blanched, toasted or ground, they go into ghriba, gazelle horns, briouates, amlou and sellou. Pan-fried, they top a tagine or a seffa; oven-roasted with a pinch of salt, they are served warm with tea.

Storage

In an airtight container, in a cool place away from light. For longer storage or in very hot weather, keep them in the fridge: almonds go rancid in the heat.

Questions about standard almonds

How are they different from the Forna almonds from Meknes?
The standard almond is our everyday almond, more economical, suited to cooking and large quantities. Forna is an almond from the Meknes region, sold under that name, and people like to serve it whole with tea.
How do I roast them at home?
Spread them on a baking sheet and roast for 10 to 12 minutes at 170°C, stirring halfway through, until they smell toasty. Let them cool: that is when they turn crunchy.
